Upgrade your favorite comfort food by swapping out your boring yellow cheese with Brie and topping it with our Blueberry Bourbon Saucy Compote for the perfect combo of cheesy sweetness that will have your family begging for more. This adult grilled cheese was already asked back for a repeat performance!
Despite the name, this recipe can be devoured by the entire family as you control the amount of compote (and bourbon) added. Our eldest loved that she was eating a fancy grilled cheese, just like her idol, Fancy Nancy, and our littlest loved getting the blueberries all over her face.
Feel free to add any additional flavors – red onions, spinach, additional cheese, etc. It’s completely customized to your taste!
Boozy Blueberry Grilled Cheese

Depending on the size of your skillet, you may choose to do one sandwich at a time. We started off with two in the skillet but it got a little messy during the flip so finished with one at a time. We spread this out over two nights because the girls loved it so much so we just made 4 sandwiches at a time.
Ingredients
- 16 slices of your favorite bread
- 1 wheel of your favorite Brie cheese, sliced to your desired thickness.
- 1/2 cup Blueberry Bourbon Saucy Compote
- 2 Tbs Butter
Instructions
- Preheat skillet to medium low heat and let warm up for a few minutes.
- Generously butter one side of a piece of bread.
- Place bread buttered side down on the skillet (one or two at a time).
- Layer on the sliced Brie cheese and drizzle with the Blueberry Bourbon Saucy Compote.
- Butter a second slice of bread on one side and place butter-side-up on top of your sandwich.
- Cover with lid (or use a baking sheet if your skillet is too big).
- Grill until lightly browned and flip over carefully, making sure that the Brie and compote stay in place and continue grilling until the cheese is melted and both slices are lightly browned.
- Repeat with remaining bread, butter, Brie and compote.
- Enjoy all the sweet, cheesy goodness!
