This Fresh Peach-Berry Crumble was the first recipe we used from the peaches we picked. Since they were so ripe they practically peeled themselves, we wanted to make something quick, easy and delicious with the ingredients we had around the house. Plus we needed to use some of the blueberries we picked earlier this summer that we still have tons of.
This is a very hands-on recipe and perfect for toddlers because it doubles as a sensory activity. It’s a little messy, but it keeps them busy while you get the peaches prepared. They’ll think it feels like sand and you don’t have to get your hands messy.
Here’s the recipe, hope you and your family enjoy it as much as we did!
Fresh Peach-Berry Crumble
Notes
Put peaches in an ice bath for 2-3 minutes to shock the fruit and make them easier to peel.
Ingredients
- 8-10 medium fresh peaches, peeled and pitted
- 1 cup blueberries, fresh or frozen
- 1 Tbs vanilla extract
Crumble
- 1 cup flour
- 1 cup oats
- 3/4 cup white, granulated sugar
- 1/4 cup brown sugar
- 1 Tbs cinnamon
- 1/2 cup (1 stick) butter, cold and cubed
- 1/4 tsp sea salt
Instructions
- Preheat oven to 375*.
- Peel peaches and cute into bite size pieces and set at the bottom of a glass baking pan. Top with blueberries, add vanilla and toss.
- For the crumble: Combine all the ingredients in a bowl. Use clean fingers to incorporate the butter into the mixture and work with it until it's a crumbly mixture with small clumps. (Perfect for toddler fingers!)
- Sprinkle the crumble over the peaches and berries.
- Place in the oven for 30 minutes.
- Let cool for a bit and top with some vanilla ice cream for the perfect summer dessert.
