When you marry a Kentucky boy you’ve got to learn to do 2 things: Pronounce Louisville correctly and know how to choose a good whiskey. We’re a Maker’s Mark family here so I wanted to make a special treat for the hubs while using up some of our fresh picked berries. This Blueberry Bourbon Saucy Compote can be paired with your favorite dessert or to dress up chicken, fish or steak. Make it as boozy as you want or tame it for the kiddos.
Blueberry Bourbon Saucy Compote
Ingredients
- 3 cups Blueberries Fresh or Frozen
- 1/2 cup Bourbon Can eliminate water and do 1 full cup of bourbon
- 1/2 cup Water
- 1/4 cup Brown sugar
- 1 Tbs Vanilla extract
- 3 tsp Corn Starch
- 2 Tbs Water
Instructions
- Add blueberries, bourbon, water and brown sugar to a saucepan. Turn to medium-high heat and let heat until boiling.
- Once boiling, reduce heat and simmer for 25-30 minutes, stirring on occasion.
- In a small dish, mix cornstarch and 2 Tbs of water until thinned without any lumps.
- Pour cornstarch mixture slowly into saucepan, stirring until fully mixed. Turn heat to medium and heat mixture for 5-6 minutes, stirring while it thickens.
- Turn off heat and add vanilla extract, stirring and let cool. Use immediately or cool to desired temp. Store in the refrigerator for 5-7 days.
