Ice Cream Pixie Pops

Our girls are obsessed with everything fairy these days. If we’re outside, we’re collecting materials to make a fairy house or hanging out in our new Fairy Play House. Wings are a wardrobe staple and our treasure hunts lately have been leaning toward fairy finds. We even caught Bailey making a fairy home out of “clouds” under the dining room table which we determined was from the stuffing she pulled out from one of our couches(ugh).

We threw an Enchanted Forest Birthday party for our two little fairies a couple weeks ago and the most requested recipe from the party was one of the easiest, our Ice Cream Pixie Pops. With only three ingredients, it’s a quick and budget-friendly recipe at less than $.25 per Pixie Pop. Plus the girls loved making them almost as much as they did devouring them.

We’re a Belfonte Dairy family so we had to start with our favorite Vanilla ice cream, but these Pixie Pops are easy to customize so feel free to use your favorite flavor. Since these are Pixie-size, we went with vanilla wafers for the sandwich pieces and added Fruity Pebbles to give them a pop of color – or flower power as my eldest kept saying.

We laid out wafers and Fruity Pebbles in some smaller bowls so they would be easier for little fingers to get to. We used a Cookie Scoop that is made for 2″ cookies and it made for the perfect size scoop for the Pixie Pops. This can get a little messy when you’re not working with tiny helpers so expect a bit of a mess…we definitely ended up with more “flowers” on the floor than on the pops themselves.

If you are making them for a party, I recommend letting the Pixie Pops firm up in the fridge for at least an hour before adding the cookie sticks, but we were just making them for fun today so they didn’t make it back to the freezer. For neater pops, use a small spatula or butter knife to clean up the edges before rolling them in the pebbles…it’s a lot cleaner (and less germ-y) than when your three year old uses her tongue.

Once they were made we took them out the their Fairy Play House to enjoy and little sis was just as enthusiastic about them as her big sis. Definitely recommend enjoying these outdoors, especially with little ones so you have a hose handy.

Winner, winner! Plus you can make a large batch for parties, freeze a batch for future cravings or on demand for a perfect summer treat.

This counts as a sensory activity, right?
